Gazpacho (Cold Soup from Andalusia, Southern Spain)

Have you ever tried cold soup? Well... this is the time!

From Jose Andres - Made in Spain TV show, here there is Gazpacho! Gazpacho is a cold soup from Southern Spain, especially Andalusia but well known in Portugal and Latin American countries as well. It is ideal for a hot summer day... we have another "Spare the Air" in Northern California again :=(

I cut 1/2 green pepper, 2 large tomatoes, 1/2 cucumber, about 5 garlic cloves -depending on your taste- (I always add more), a touch of olive oil and sherry vinegar.

I mixed all the ingredients in the food processor (you can use the blender) making them almost liquid. Depending on your taste, it could also be served with diced ingredients.

The mix was enough for two servings. You can add more veggies for more people depending on your serving.
