Veggie wraps


I also like to make wraps using tortillas with different colors following the rainbow! I don't follow any recipe for that. It's up everyone's taste. I like to make it colorful as you can see in a few pictures below. 

It is also a good way to add veggies to your diet. 

The basic ingredients for me are:
  • 2 tortillas
  • a generous amount of any dip
  • lettuce
  • tomatoes
  • onion slices
  • Kalamata olives
  • roasted bell peppers
  • shredded vegan cheese
  • and any other item you can think will do 
There are colorful tortillas: sun-dried tomato and spinach.

Whole Wheat spinach pockets

HTML clipboardI used to buy Amy's Spinach Feta in a Pocket Sandwich when I was a vegetarian and didn't have too much time to cook. They taste good but are made with white flour which doesn't have nutrients. The filling is quite scarce and has feta cheese.

So I decided to do it myself.

I had an old recipe for whole wheat dough using:
  • 1 cup whole wheat flour
  • 1/4 cup soy flour
  • 1/2 TB yeast
  • 1 cup warm water
Soy flour makes the dough smooth and easy to work with. Add more water or flour if needed.

Let the dough rise until it doubles it sizes. Then, separate in four balls and knead in rectangular shape.

For the filling, I defrost a bag of frozen spinach and mixed with 1/3 cup tofu or vegan cheese, 1/3 cup Parmesan cheese, and pepper to taste.  I mixed all the ingredients in the food processor and divided it in four portions. 

Put one in top of each rectangle and close like burritos forming a pocket.

Please feel free to double or triple the recipe. They can be stored in the freezer well.

Vegetables pinwheels

Pinwheels are a good appetizer where everybody can pick what they want. If you are in a hurry, just load veggie wraps or tortillas with veggies, cheese, or other ingredient you like. Leave the filling to your imagination or creativity. That's why I like them!

These two I made have two different wraps.

The green wrap (spinach) has sun-dried tomato hummus, roasted bell peppers, and lettuce.

The orange wrap (sun-dried tomato) has
vegan cheese, avocado, and lettuce.
I made them this way just to make them colorful with color contrast.

Falafel wraps

This sandwich is similar to the Mediterranean Wraps. The style could be Mediterranean or Middle Eastern. It probably fits the second one best.

It is easy to make, delicious, and nutritious.

Ingredients:

* Lavash bread
* 1/2 can Baba Ganoush
* 4 falafel patties or balls
* 2 roasted eggplants
* 1 cup Lettuce
* 6 Grape sweet tomatoes
* 1 TB nut cheese
* 6 Kalamata olives

Directions:

On a cutting board , put the Lavash bread flat and spread Baba Ganoush on it. Then, accommodate the rest of the ingredients on one side of the bread as shown. Roll from here to the end. Put the roll (or wrap) on top of a hot grill without any grease. Let sit on top until the bread gets firm. Turn it around and  leave them for a few minutes.

Mediterranean wrap

Wraps are very easy to make and delicious to taste. I make different ones using tortillas or Lavash and changing veggies. Lavash is an Armenian flatbread also eaten around the Middle East. It's usually found in Middle Eastern stores although supermarkets can carry them as well.

  • 2 pieces Lavash bread or tortilla
  • a generous amount of any dip (I like Baba Ganoush)
  • lettuce
  • tomatoes
  • onion slices
  • Kalamata olives
  • roasted bell peppers
  • shredded vegan cheese
  • and any other item you can think will do

 Lavash is a good bread and toast it a little bit so the result should be a bit warm. Put the roll (or wrap) on top of a hot grill without any grease. Let sit on top until the bread gets firm. Turn it around and leave it for a few minutes.
