A simple tapa with a "cheesy" heart.
Ingredients:
- 2 large potatoes
- 1 to 2 slices of any nut cheese, cubed
- 1 tbsp chopped parsley
- 1 tbsp chopped garlic
- bread crumbs
- 1to 2 tbsp olive oil (as needed)
- 1to 2 tbsp apple cider vinegar (as needed)
Cook the potatoes and mash them. When cool, mix parsley and garlic.
Take small portions and make a hole in the middle to insert the cheese. Cover and make it round or the shape you prefer.
Dip each croquette into a mix of 2 tbs. olive oil and 2 tbs. apple cider vinegar one container, letting the excess drip off. Use more if needed.
Then roll in bread crumbs to coat in a different container.
When they are all ready, bake croquettes until crispy turning them carefully.
Dry in kitchen towels and serve immediately.
