Banana nut bread

This bread is ideal for your afternoon tea or coffee. I replace the original recipe with rolled oat to make it nutritious.

This is my high-fiber version:


  • ½ cup rolled oats
  • 1 ½ cup whole wheat flour
  • 1 tbsp baking powder
  • 2 mashed bananas
  • 1/2 cup applesauce  
  • 2 tbsp vegan butter (at room temperature)
  • 1/3 cup orange juice
  • 1 tbsp orange rind
  • 1 cup walnuts, chopped


Preheat oven to 350°F. Using the food processor, run the oats until look finely grounded like flour. In a large bowl, mix flours and baking powder.

In a normal bowl, mash bananas, add soy butter, egg, orange juice, orange rind and walnuts.  Add the mixture to the dry ingredients and mix until smooth.

Pour into greased loaf pan. Depending on your oven, bake it for 45-50 minutes or until a toothpick comes clear.

Cool in rack. Remove from pan after 10 minutes.
