Fig bars

Figs are a good source of calcium and fiber in addition to various minerals and antioxidants required for everyday life. 

This recipe will make a good healthy snack. 


Ingredients:

  • 2 cups of dried figs
  • 1 banana
  • 1/2 cup applesauce
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
  • 1 cup chopped walnuts
  • 2 tbsp brandy or cognac
  • Confectioner’s sugar for dusting
Directions:

Preheat oven at 325°F. Line a 8” square baking glass container with wax paper and a bit of oil. Or you can use a 9” x 13” container. In this case, the final product would be thinner.

Chop figs and set aside.

In a bowl mix the banana and applesauce until well blended. In another bowl, mix the dry ingredients, and then fold into the banana-apple mixture in several batches.

Stir in the figs, walnuts, and brandy or cognac.

Scrape the mixture into the prepared pan and bake until the top is firm and brown, 30-35 minutes depending on your oven. It should still be soft underneath.

Let cool in the pan for about 5 minutes, then transfer to a cooling rack. Lightly sprinkle with confectioner’s sugar. Cut into bars.

Makes: 16 thick square bars
