Migas (vegan)

From a collection of tapas, Migas -fried breadcrumbs- are popular snack at any time of the day in Spain. It is usually served with a fried red chorizo (sausage) or with fried eggs with Spanish pimentón (paprika) and a little vinegar dribbled over them.

This is a vegan version of the dish using veggie sausage. 

Ingredients:

•    1 tbsp olive oil
•    1 small onion
•    4 sliced garlic cloves
•    2 veggie sausage, cubed
•    2 thick slices country bread, cubed
•    1 tsp Spanish pimentón (paprika)
•    freshly ground pepper

Preparation:


Heat the olive oil, add the onion and garlic. Cook for a few minutes. Add the cubed veggie sausage and cook a bit more.  Sprinkle with paprika and ground pepper.

Cook these for 5 minutes, moving them constantly. Serve warm.
