Another healthy 4th of July B-B-Q

Instead of going out to look for a free grill at the park, I decided to stay home and do my healthy BBQ with my grill. It was nice to enjoy all veggie goodies...


I started with some veggies: eggplant, four types of peppers (to get different colors), red onion, zucchini, and some pieces of firm tofu.

Then, I filled the skewers alternating the veggies to get them colorful. I made a green salad with lettuce, tomatoes, and red onions.
