They are quick to make. You can also vary them adding herbs or scallions.
Ingredients:
- 1/2 cup of whole wheat flour
- 1 flaxseed-egg (or egg substitute)
- 2 TB non-dairy milk
- 1/2 cup grated vegan cheese (or soy-like cheese)
- 7 oz. can whole kernel corn, drained
- pepper to taste
- olive oil
Place the flour in a mixing bowl, make a well in the center and drop in the flaxeed-egg. Add the milk and mix, gradually incorporating the flour, and beat until smooth.
Mix in the cheese, corn, and pepper.
Heat the oil in a frying pan, add tablespoonfuls of the mixture and sauté for 2 minutes on each side until golden brown.
Repeat with remaining batter.
Makes: 6-8 depending on the size of each one.
